How many probes should i make before i make my first building and when should i start scouting?

usually you get to 8/9 psi and then begin your pylon asap.
then you scout with that probe.
i will probably be corrected, though.

No correction here. With practice and a little luck you can keep constant probes producing AND get the pylon down, but most of time you'll have to wait at 46 minerals

pylon first, if you scout too early you wont see anything more than a basic building, but going a little later on [right after the pylon, as opposed to before] you can see if they got gas early, if they are saving for an expo, etc.
this can impact your build order.
gateway timing differs, usually on 10/17 or 11/17 though.

Zealot if you're planning on rushing/pressuring, but get the pylon up asap too.
This is all matchup and scouting dependent too, for example if you're facing a terran who walled in then don't bother with zealots, just get goons and goon range.

the most standard build is 8 pylon 10 gates after this is where the builds may hcnage wether its 2 gates or fast goons.

I find taht scouting after the pylon is more effective than scouting after the gateway. By stalling that long, you drastically increase your chances that you won't see anything at all, which is a lot worse than going too early and seeing only the seeds of their build.

by the time you get your gateway down and into their base [especially true on 2v2 maps] they could already have something there to fend off that probe scout early on i.e. marines or lings.
i agree with AsterisK.
also, the matchup and build that you and your opponent are going for are both the biggest factors in the gameplay.
